Joshua Cooper "Captain's Creek" Chardonnay 2016
The wine sees one year in oak on full lees, no stirring, and no racking, then transferred to stainless steel with all the fine lees for a further 6 months elevage- Faint crushed rock and flint, lemon balm, apple and pear, with deeper spicy and savoury notes of mushroom and old cedar. The palate shows a wealth of concentration from season, site and variety, with fleshy fruit and striking acidity carried by an earthen undertow from the basalt soils. Apple and pear, honey and cedar, menthol, and earth. Full bodied, honey apples, with a tight spine of acidity, a glossy almost viscous texture, and long savoury finish. Fuller style, but belted in and balanced. Unique style.
