COS - Cerasuolo Di Vittoria Classico DOCG 2013
by Cheese Meets Wine
Cerasuolo di Vittoria shows a brilliant ruby red colour. Drinks very much like a Cru Beaujolais, with fresh and lively acidity, and full of fruit. One of those wines that you can swirl and swirl, and never get tired of sticking your nose in the glass. The nose denotes intense, clean, pleasing and refined aromas which start with hints of black cherry, blackberry and plum followed by aromas of raspberry, blueberry, carob, violet, tobacco and vanilla. Tannins are so fine they feel like they aren’t even there. The mouth has good correspondence to the nose, a slightly tannic attack and pleasing crispness, however balanced by alcohol, good body and intense flavours. The finish is persistent with flavours of black cherry, plum and blackberry. Needs time in the cellar.
Pairing Tips: Strong Oily fish, White meats.
